Ember vendace

Charcoal vendace for 4

400g gutted vendace
1pc early cabbage
1 bundle spring onion
200g yellow/striped beet
1pc lemon
salt, olive oil

Rinse the yellow beetroot and season with oil and salt. Wrap in foil and place on the grill or in the oven to cook for about 45min. Chop the cabbage, toss it in oil and put it on the grill for about 10min to cook. season with salt. spring onions also about 5min. Thread the vendace on skewers and grill hot when the vegetables are ready in around 2 minutes per side, season with salt. Serve with vegetables and lemon juice.
